Using his skills and recipes, he opened Mexican Maid, a small restaurant in downtown Albuquerque area. With a sopapilla machine and delicious New Mexican recipes, Ray and Lawrence went on to create Stufys Restaurants, which were carried on by Paul Madrid and Lawrence Villanueva II — Lawrence still operates the restaurants today. As soon as you walk in, you can tell that Stufys really cares about its Albuquerque clientele. They offer some of the most varied sopapilla options in New Mexico, so that you always find a sopapilla that makes your taste buds explode. El Modelo Mexican Foods: El Modelo has been around since 1929, in the same exact business location on 2nd street. One of the best things about El Modelo Mexican foods is that they have stayed consistent for 90 years. It is without a doubt that every time I order from El Modelo it is a must have to order a stuffed sopapilla and a tamale. A stuffed sopapilla is a pastry that is fried until it’s soft and fluffy stuffed with beans, cheese, lettuce and red chili (As shown in the image above). El Modelo also offers breakfast sopapilla with eggs, bacon, beans, cheese, potatoes and of course RED CHILI!  Once you get a taste of this delicious meal, I guarantee you will go back for more. The stuffed sopapilla itself is very filling and satisfying. The atmosphere itself is welcoming and friendly. As soon as you walk in you can smell warm, appealing food in the making that it almost makes you feel at home. After your food is ready you can go ahead and eat at their new remodeled patio area outside.
Padilla’s Mexican Kitchen: Padilla's Mexican Kitchen gives you the best of all worlds: authenticity, a delicious taste, and a great atmosphere. It is a small family owned business that greets you with a smile and fast service, every time you come in. They only accept cash so come prepared. You will leave the place wanting more of their sopapillas. There are many variations of them that you can order. You can get them stuffed with chicken, beans, and green or red chili on them. You can also just get sopapillas plain and they are equally as delicious. Almost anything that you get from Padilla’s is guaranteed to be delicious.
We can just keep telling you about how great these places are, but you can only truly know how flavorful the food is, if you visit these locations yourself. When it comes to the culinary, you must go out and try it yourself. Once you do, you will leave with nothing but further love for the Albuquerque culinary scene. You can expect nothing less than the most authentic, delicious, and varied sopapillas that Albuquerque has to offer!
